I was able to understand what each bit meant by looking at the hex values stored in the file and the offsets and values stored in the parser. To further improve my understanding, I will periodically pull a new save file from the wii fit arcade and try to extract the data using the new info I learned.
Once you have a good understanding of what each bit means, and the offsets and values stored in the parser, you can start to add more to it or alter it to extract the data you need. At this point I would go back to the developer and ask for help, or suggest one of the other games they were using. I'm sure there are many apps out there that use wii fit save files, so having a parser is handy. If the app doesn't have one, you can use wii-fit-parser.py as a starting point.
By using a hex editor I was able to edit the.wii_save and.wii_save_par files to add and remove data, and change the offsets and values stored in the parser. I was able to do this because I knew exactly what I was looking for in the file, and the offsets and values
I found the python code from a paper I found a while back, of translating the data back into a usable format. I did some tweaking, and came up with my current program. It's a bit slow, and not very accurate, but it's the best I have at the moment. It works by parsing the hex-reverse string, and then using that value to find the correct offsets and values in the save file, to be able to reconstruct the original hex.
If you don't want to use the tool, you can also look at the offsets and values that I found and used. It's a bit tougher to get info off of wii fit, but there are a few offsets you can get data from.
